Everything at the small sit-down dinner party has gone beautifully. Techniques to melt chocolate are simple. If the melted chocolates you put in the fondue pot hardened, you didn’t get the timing right.

Chocolates must be set on a low heat. Overheated chocolates will tend to appear dry and crumbly when proper heat and timing is not met.
